Crawford also takes care to include general business topics such as writing a business plan, securing financing, and sourcing equipment, but also touches upon easily neglected details such as selecting a location that is on the morning-commute side of the street or that has delivery access for a 30-foot semi-trailer. A must for anyone looking to open or currently operating any form of bakery or cafĂ© establishment!

Really good book for a beginning your search on how to ...

Really good book for a beginning your search on how to run a bakery business. One thing it doesn't address though is how to run a SMALL bakery. This is for people who want to run a huge shop with a dozen or more employees. What if it's just you and a friend working out of a shed in the back yard? I would personally like to know a little more about that. But for a start, it's good at helping you learn where to order supplies, how to order, how to price your product, what the minimum tools are for the trade, and a few specialty tools that will make life easier.

This book is written with a strong knowledge of the industry and clear breakdown of key steps for opening a retail bakery. The construction time-line with action points for future bakery owner is worth the price of the text alone. Easy to read and great end of chapter exercises. I highly recommend this text.
